Banana Nut Bread

Nothing better than a banana after a run (Or banana Nut bread). Today I had the GOTR 5k race. The girls did an amazing job and the coaches and staff couldn’t be more proud. Everyone worked so hard for this event. Every girl finished and all the buddy runners plus families came out to support them. I got to run with one of the girls and I was blown away by her effort she showed out there today. She was giving it her all and was able to run the entire race. Check out a few photos from the race!

GOTR 5k Banana (Nut bread)


3 eggs, separated yolks and whites
4 Tbsp. Honey
4 Tbsp. Coconut Oil, Melted
2 tsp. Vanilla Extract
3 Browning Banana’s, Mashed
1 tsp Baking Powder
1/2 tsp. Cinnamon
2 Cups Almond Flour
1 Cup Walnuts


  1. Combine Egg Yolks and Honey in a large bowl. Mix well with hand mixer until it gets thicker (like batter).
  2. Add Coconut Oil, Vanilla and Bananas and mix well with hand mixer until lumps are gone. 
  3. In a separate bowl, combine flour, baking powder and cinnamon. Mix well
  4. Combine flour into Banana mixture and hand stir until it is well mixed. 
  5. In a separate bowl, hand mix the egg whites until stiff white peaks appear. Hand fold into Banana mixture. 
  6. Grease a metal loaf pan and pour in the batter. Bake at 350 degrees for 40-45 minutes until a knife comes out clean. Let cool a little and serve warm or cold. Enjoy!

  • Funny! I thought you were going to take it super easy today….and instead you are baking and blogging and out and about! Of course you are!

  • Cooking/ Baking is my stress reliever! I can't help it 😉 This was taking it easy for me- minus a little photo shoot with 4 lovely children, it was a quiet afternoon!
