I like to make recipes that use common household kitchen utensils and ingredients. I hate when I read a yummy recipe and it has so many things I would need to go out and buy. I don’t have an ice cream maker handy. I know a lot of people don’t just have that lying around but I love ice cream so, I created this “no ice cream maker required” Paleo Mint Chip Ice Cream.
- 2 Frozen Bananas
- 2 tsp. Dark Chocolate Cocoa Powder
- 1/3 C. Full Fat Coconut Cream (the thick stuff off of the top of a refrigerated can of Coconut Milk)
- 2 tsp. Honey
- 1/8 tsp. Vanilla Extract
- A Dash of Alcohol Free Peppermint Extract (to do a dash, I use half of an 1/8 tsp.) but just tiny drop will do. You can add more depending on how minty you like your ice cream.
- 2 TBSP. Chocolate Chips (I use Enjoy Life Brand)
Growing up, one of my favorite things to do was to go to work with my dad and we would get Dunkin’ Donuts sometimes and I always loved getting Jelly donuts just like him. While I’ve cut out my Jelly donut intake, that doesn’t mean I don’t still crave it (especially now that I am pregnant)! Why is it that you crave childhood foods when you are pregnant?? If I ask for a strawberry Pop-tart with icing…Just say NO!!!
These muffins are great with the Jelly but they are also delicious with just the cinnamon Sugar. They Jelly is totally optional!

I love using fresh fruit in my desserts. This recipe has been one that I have been working on for a while. The versatility of this recipe is great for seasonal baking, just use whatever berries or jams you have handy. My favorite is a simple Strawberry because I always have these ingredients in my fridge. Baby Boy LOVES strawberry so it is in high demand always.

Pomegranate Venison Tenderloin
This is my new favorite way to eat venison. I had Pomegranates and oranges left over from my holiday decorations and decided to get creative with dinner.
