How can two little Humans require so much running around and movement!?

I’ve discovered the truth in people saying, I don’t have time to eat because I have kids. I’ve had to take a step back over the last few months and create a Paleo routine with my new family dynamic.

I did a Whole 30 in January and it really helped me reflect on how Food is meant to heal and make us feel good. I have fallen in love with the Paleo lifestyle as a mom because I am able to teach my children what a healthy relationship with food can look like.

With that said.. WE ARE SO BUSY! I have officially stock piled my house with Paleo foods for on the go.

Plantain chips, RX BARS, trailmix and homemade muffins. I’ve never seen so many mason jars and tupperware containers in my pantry!! And of course our favorite Paleo food Thunderbird Bars

It is no new message that my Husband and I have been huge fans of Thunderbird bars for a long time now. I’ve tweeted and posted about them before but being a mom now, this love has grow even stronger. My son loves these bars and I am thrilled that our family can buy a box of bars and be satisfied for meals or snacks. I don’t have to make or find 4 different snacks for each of us! Do yourself a favor and Buy your loved ones these bars for Valentines Day. Nothing says I love you like the Hazelnut + Coffee + Maca bars. I was worried about the caffeine in these bars since I have been caffeine free for almost 7 years but I couldn’t resist trying them and so far, no caffeine headaches or side effects! (I’m not letting my 2 year old eat them though- mostly because they are too delicious for him! hahaha selfish mommy!) These bars taste like coffee brownies – SERIOUSLY, WHY AREN’T THEY IN YOUR SHOPPING CART YET?

We both agree our favorite is the Hazelnut. Super Hubby loves the Pineapple + Mango + Papaya. Baby boy and I are obsessed with sharing the Cashew + Fig + Carrot bars or the Cherry + Walnut + Cinnamon bars.

These bars are excellent on the go snacks because they actually satisfy your hunger.

So if you are busy like me – buy some bars and keep them in your bag, car or bed side table (don’t judge, I’m a nursing momma!)

My husband has been using these bars to fuel him during and post races!

Flourless Chewy Chocolate Cookies

I have been so busy these past few months! Nursing my baby girl constantly (SERIOUSLY.. she eats ALL the time, every 40-90 minutes all day and night long)

She hates sleeping too so it is everything I can do to cook for my family, clean and manage to have energy to play with my VERY ACTIVE 2 year old. Needless to say, I have been exhausted and not able to create too much in the kitchen for my awesome followers. SORRY!!

I’m not sure about you BUT when I am tired, I      C R A V E  sugar so much! This is not a good thing for me because sugar makes me irritable and moody. Continue reading

Brandon’s Guacamole

Brandon’s Guacamole

Ingredients:

  • 2 Avocado’s
  • 1/4tsp Garlic Powder
  • 1/4 Red Onion
  • 1 tsp/ Garlic Powder
  • 2 Cloves Garlic
  • 1/4 Habanero Chili
  • 1/2 Lemon Juice

Process:

  1. Mash 2 Avocado’s in a bowl and add the juice of one lemon.
  2. In a food Processor (I use a Ninja) Add Habanero, onion and Garlic cloves. Chop well.
  3. Add Chopped ingredients to the mashed Avocado. Mix well and then add Garlic powder and Salt, Pepper (to taste).
  4. Mix well and serve with carrots, peppers, tomatoes, celery or your favorite Paleo crackers.

Paleo Crunch

Paleo Crunch
Ingredients:
  • 1/2 c Pumpkin seeds
  • 1/2 c Sunflower seeds
  • 1 c Almond Meal
  • 1 c Shredded Unsweetened Coconut
  • 2 c Almonds, chopped
  • 1/2 c Coconut Oil
  • 1/2 c Honey
  • 1 tsp Vanilla Extract

Process:

  1. Preheat oven to 325 degrees
  2. Line a cookie tray with a silpat or parchment paper
  3. In a large bowl, add seeds, almond flour and nuts. Mix well
  4. Add in Honey, oil and Vanilla, stir until combined.
  5. Spread mixture onto the cookie tray.
  6. Bake for 20 minutes
  7. Flip it over/ stir it around  and bake it for another 5 minutes
  8. Remove from oven and let it cool for 10 minutes
  9. This stores well in a tightly closed tupperware. I keep mine in the pantry for 5-7 days.
*The great thing about this recipe is that you can do so many different variations. Even if you can’t have some of the ingredients or are missing a few- use these guidlines to make you own variation. I’ve baked it with 1/2 a cup or raisins for a sweeter treat. It goes great with some fruit and dark chocolate or just a simple bowl of crunch and almond milk.

 

Berry Delicious Tartlets

These are a simple Fruit tartlet that you could create for a brunch or a light dessert. I’ve been on a fruit kick lately, clearly missing Summer on these cold winter days.

The tartlets pictured are with a Gluten Free Pie Crust but I love making these with Elana’s Pantry Pie Crust better.

Crust Process:

  1. Take the Crust and roll it thin. (If using Elana’s Crust- Use two pieces of Parchment paper, spray with coconut oil and roll this with a rolling pin.)
  2. Cut the crust with a 2 1/2″ round cookie cutter
  3. Place the pie crust in a well greased mini- muffin pan
  4. Set aside while making Fruit filling

Berry Filling Ingredients: (will make 8 tartlets)

  • 1/2 Cup Strawberries, diced
  • 1/2 cup Raspberries, halved
  • 1 TBSP. Honey
  • 1/2 tsp. Tapioca Flour
  • dash of Nutmeg
  • 1/4 tsp. Cinnamon
  • dash of fresh lemon juice

Paleo Mint Chip Ice Cream

I like to make recipes that use common household kitchen utensils and ingredients. I hate when I read a yummy recipe and it has so many things I would need to go out and buy.  I don’t have an ice cream maker handy.  I know a lot of people don’t just have that lying around but I love ice cream so, I created this “no ice cream maker required” Paleo Mint Chip Ice Cream.

Ingredients:

  • 2 Frozen Bananas
  • 2 tsp. Dark Chocolate Cocoa Powder
  • 1/3 C. Full Fat Coconut Cream (the thick stuff off of the top of a refrigerated can of Coconut Milk)
  • 2 tsp. Honey
  • 1/8 tsp. Vanilla Extract
  • A Dash of Alcohol Free Peppermint Extract (to do a dash, I use half of an 1/8 tsp.) but just tiny drop will do. You can add more depending on how minty you like your ice cream.
  • 2 TBSP. Chocolate Chips (I use Enjoy Life Brand)
