Ingredients

  • 2 lbs Boneless chicken breasts
  • 1 lb medium, deveined and shelled shrimp
  • 2 Red bell peppers
  • 2 Broccoli crowns
  • 2 cups Vegetable broth
  • 2 tbsp Coconut sugar
  • 1 tbsp Rice vinegar
  • 2 tbsp Sesame oil
  • 3 tbsp. Coconut Aminos
  • 1 tsp. Fish sauce
  • 1/8 tsp. Red Pepper Flakes

Instructions

  1. In a skillet add chicken and 1/2 C. Vegetable broth

  2. Cook chicken until cooked through

  3. Add shrimp and cook until shrimp turn pink

  4. In a sauce pan, combine vegetable broth, Coconut Aminos, Rice Vinegar, coconut sugar and sesame oil. Stir on medium heat until it gently boils

  5. Chop the broccoli florets of the stem and add them to the chicken and shrimp

  6. Slice the pepper into thin strips and add to the chicken and shrimp

  7. Pour sauce mixture into chicken and shrimp mixture, turn on high and bring to a boil for 2 minutes. Reduce heat and serve with cauliflower rice.

Easy Burger Night Meal Plan

Easy Burger Night Meal Plan

If you are anything like me- you are catching that winter cold, feeling the business of the Holiday season and just want to sit on the couch with a hot tea and a Christmas movie! I DID NOT want to cook tonight but I have a husband to feed so I did a 20 minute meal idea that he loved. It was quick and easy. 

Cajun Burger Sliders

Ingredients:

  • 2 TBS Cajun Seasoning (try to find some with natural ingredients and sugar free- we use Chef Leo’s)
  • 1 LB of  Ground beef
  • 2 tsp Coconut Aminos
  • Romaine Lettuce leaves
  • Tomato slices

Process:

  1. Preheat skillet on medium heat for 4 minutes.
  2. Add all ingredients into a bowl and form into mini burgers.
  3. Put in the pan and cook until no longer red in center (About 10 min)
  4. Place burgers on a romaine lettuce leaf with sliced tomatoes. (You can add any veggies)
    ~Makes 8 mini burgers

String beans

Ingredients:

  • 2 cups of fresh String Beans
  • 1 TBS of grass- fed butter
  • sea salt and cracked pepper to taste

Process:

  1. Boil water in a pot and add beans to boiling water.
  2. Cover and continue to boil for 4-6 minutes (depending on the softness you prefer on the beans.)
  3. Drain and add butter and Salt and pepper to taste

Baked Apple Slices

  • 2 small Apples
  • 1/2 TBS Organic Maple Syrup
  1. Slice apples and peel.
  2. Place in a glass bowl and add syrup
  3. Microwave for 5 minutes. Remove and stir.

This was a delicious warm meal that was perfect for the Holiday season. The baked apples were a nice dessert during our Christmas Movie: “The Year Without a Santa Clause”
