I used to be right there with them for my sugary latte. While I can’t handle the sugar anymore, I do still crave the pumpkin spice flavor. Here is how I get my Paleo Approved Pumpkin Spice Latte Fix!

Pumpkin Spice Latte

#Basicwhitegirl Pumpkin Spice Latte

Servings 1 Serving

Ingredients

  • 12 oz. Brewed Decaf Coffee
  • 2 Tbsp. Pumpkin Puree
  • 2 oz. Almond Milk
  • 1/4 tsp. Pumpkin Pie Spice
  • 1 Tbsp. Coconut Sugar

Instructions

  • Brew your coffee of choice
  • Add coffee and ingredients to a blender
  • Blend well, pour into your favorite mug and sip immediately

After reading this article I decided to share how I get Kale into my diet at least 3 times a week. I generally make this smoothie for breakfast or for Pre or post intense workout. Caution- it is surprisingly filling!

Kale Smoothie

Ingredients

  • 2 cups Coconut Milk (I’ve also used almond milk)
  • 2 Cups crushed ice chips
  • 1 Kale leaf (about a half a cup)
  • 2 Tbsp Cashew nut butter
  • 1 Banana

Process

  1. Place all the ingredients in a blender and blend until smooth

My nephew kept asking for more smoothies- his has a little less Kale because he didn’t want it to be green!

Try this delicious slightly sweet tea using all natural fresh ingredients.

Slightly Sweet Tea

Ingredients:

  • 3 C. Unsweetened tea
  • 1 Tbsp Honey
  • 1 Cup Pineapple, cubed
  • 1 stalk Orange Mint (any mint will do.)

Process:

  1. Place Pineapple cubes in a pitcher.
  2. Pour unsweetened tea and honey over the pineapple, mix well.
  3. Add mint leaves by ripping leaves into pieces and place them in the tea.
  4. Use a wooden spoon and mash the pineapple, mixing the tea.
  5. Let the tea sit in the fridge for 30 minutes.
    4 simply delicious ingredients

I can’t wait for smore’s on the beach and sandwiches for lunch by the ocean.

I have been working on a smoothie that is delicious without dairy, sweetener or fruit. Here is my favorite.

 Coffee”Nut” Smoothie

Ingredients:

  1. 1 C Cold coffee (decaf for me)
  2. 2 Tbsp. Nut butter ( I used Cashew butter)
  3. 2 Tbsp. Coconut Milk
  4. 2 Cups crushed Ice

Process:

  • In a blender, add ice, cold coffee and coconut milk. Blend on high until it looks like a milkshake.
  • Add Nut butter and blend well.
  • Pour in a tall pint glass or a to go cup.

The power of this smoothie is that it gives you protein and energy because of the nut butter and you still have a delicious coffee flavor. I drink these for breakfast on busy mornings, as a no sugar and no dairy snack (perfect for 21 day detox), also makes a great treat for hot summer days. It is deceiving how filling  this is and makes a full pint glass. Enjoy!

On a hot summer/ oh it’s only Spring? On a hot Spring day like today, sometimes I get really bored just drinking water. I read around on a few blogs and cookbooks and created this light refreshing beverage. It is kind of a NOjito since it is alcohol free! (except one time I put a little Malibu in it and it was delicious!) 

Flavored Water

Ingredients: 
  1. 45 Oz of Water
  2. 2 Oranges, juice only
  3. 1 Lemon, juice only
  4. 1/4 Pineapple chunks, squeezed and place in the container
  5. 25-30 Mint leaves, crushed and chopped and placed in the container



Process: 
Put 40 Oz of water in a container. Squeeze the juice of the oranges and lemons into the container. Squeeze and place 1/4 pineapple into the container. Add 25-30 fresh mint leaves. (I got some from my own herb garden and grabbed a blend of orange mint, chocolate mint and regular mint) 
Allow this to sit in the fridge for 2-3 hours and stir before serving.
