This was a great recipe to trim back my giant Basil plant. Did you know that Cilantro and herbs in general are a high source of iron and they help remove heavy metals and iron from your body? They can cleanse your liver and they are high in Vitamin C, Oleic Acid and Linoleic acid. Eating more herbs can prevents UTI, Inflammation, gas and bacterial infections. this is what Yuri Elkaim taught me about herbs during the Real food Summit by Underground Wellness. Eat more Herbs!

Picnic Ready Lettuce Wraps https://www.farmfreshandactive.com/2012/05/picnic-ready-lettuce-wraps/ https://www.farmfreshandactive.com/2012/05/picnic-ready-lettuce-wraps/#respond Sat, 26 May 2012 00:01:00 +0000 http://www.farmfreshandactive.com/2012/05/picnic-ready-lettuce-wraps/ …]]>        Happy Memorial Day weekend! We are kicking our weekend off with a picnic at Lake Audobon in Reston. Tomorrow Brandon is swimming a 5k there and then on Sunday he is swimming a 2miler and a 1 miler. We headed there tonight to check things out before we have to be there at the crack of dawn tomorrow morning. Since we both worked today and wanted to get to the park fast, I stopped and grabbed a Rotisserie Chicken from Giant and a few other goodies for our picnic dinner at the lake.
Tonight I made Lettuce Wraps, grabbed some Food Should Taste Good Sweet potato chips (kinda hardly made it to the lake since I started eating them in the kitchen!!) and some fruits and veggies.
When I got home I got straight to work on trying to get something that would be packed full of protein and carbs but easy to picnic with. Here we have Picnic Ready Lettuce Wraps. Enjoy!

Picnic Ready Lettuce Wraps

Ingredients:
4 Large Romaine Lettuce Leaves
Thin slices of: Cucumber, Tomato, Onion, Carrots and Avocado
4 Strips
Chicken Breasts or a Rotisserie Chicken
Dijon Mustard if desired

Process:

  1. In a skillet, Cook bacon to a crisp.
  2. Slice carrots, onions and Cucumbers into long thin slices (this will give it a nice crisp in every bite.)
  3. Slice thin slices of tomato and avocado.
  4. Prepare 4 Big leaves of Romaine for wraps
  5. Cut chicken breasts into bite size pieces.
  6. On one Lettuce leaf, stack your ingredients in the center. Then top it with a 2nd lettuce leaf.
  7. Roll it into a burrito shape and eat or roll it into tin foil for a picnic meal.

For our picnic dinner we had these wraps, a bowl of strawberries and blackberries and sweet potato chips. We enjoyed a nice walk along the lake and some bird and people watching on a bench while we ate. I hope that Brandon’s  pre-race nerves were calmed and he is all set for his Swimming weekend.

I love the little peppers and tomato pieces. I think it is pretty with all of the colors and  it tastes delicious.

BLT and Egg Breakfast Sandwiches https://www.farmfreshandactive.com/2012/03/blt-and-egg-breakfast-sandwiches/ https://www.farmfreshandactive.com/2012/03/blt-and-egg-breakfast-sandwiches/#comments Tue, 06 Mar 2012 04:50:00 +0000 http://www.farmfreshandactive.com/2012/03/blt-and-egg-breakfast-sandwiches/ …]]> BLT Egg Breakfast Sandwich

Ingredients:
  • 2 C. Almond Flour
  • 2 Eggs
  • 1 tsp Salt
  • ¼ tsp chili powder
  • 6 drips of Tabasco Sauce
  • For Frying: 1 tsp. Coconut oil

Process:

Mix all the ingredients in a bowl, mix well.
Roll into a ball (about the size of a golf ball. Hand flatten into a nice circle- You don’t want them to be paper thin (as thick as an English Muffin or thin pita)
Heat the Coconut Oil in a skillet until it is warmed (about mid to low heat- 3.5ish).
Place flattened dough into the coconut oil for about 30 seconds on each side (should be lightly browned).
*You don’t want them too thin or cooked too long because then it will make a chip rather than a soft pita.
Remove and place on a paper towel to dry.
Next cook Bacon and eggs, slice tomato, lettuce, veggies of your choice, for Brandon I sliced some Cheddar Cheese.
Plate your Sandwich and enjoy! This was a great pre-gym meal, it had a lot of protein and it gave me energy boost I needed to Kick box while Brandon swam a mile in the pool!
MMMM! It doesn’t even crumble when you bite into it!

Holy Guacamole BLT https://www.farmfreshandactive.com/2012/01/holy-guacamole-blt/ https://www.farmfreshandactive.com/2012/01/holy-guacamole-blt/#respond Mon, 16 Jan 2012 18:13:00 +0000 http://www.farmfreshandactive.com/2012/01/holy-guacamole-blt/ …]]> One of my favorite foods in the whole world is a BLT sandwich. Unfortunately, I do not eat bread anymore so I have really been missing them. This morning I woke up craving it so bad that I actually looked around my kitchen for some bread. Alas, no luck. I got a little creative and came up with this a BLT burrito. This was delicious. I got my Bacon, Lettuce, tomato and was even able to add some leftover Guacamole from the Giants game last night. (GO GIANTS!!) It was filling, satisfied my BLT craving and gave me a new favorite breakfast that isn’t bad for me. Enjoy!

Holy Guacamole BLT     (for 2)

Ingredients:

  • 5 eggs (I used 2 for me- a thinner burrito, 3 for Brandon- thicker and more hearty for a “Manly” breakfast.)
  • 1 LB. Bacon
  • 2 Vine tomatoes
  • 1 cup of shredded lettuce
  • Fresh Guacamole (See Football Guacamole on previous post)

Process:

  • Cook Bacon in a skillet and set aside for later
  • Grease a skillet well (you can use bacon greased pan if you LOVE bacon flavor)
  • Put 2-3 eggs in a bowl and a little Salt and pepper for taste. Whisk well until the entire egg is blended.
  • Heat skillet to mid-low heat (I used 2.8 setting)
  • Pour eggs into the skillet and make sure they are spread evenly.
  • Allow to cook for 6 minutes on one side without touching, flipping or scrambling them.
  • Remove the egg and put it on a plate.
  • Fill the egg like a burrito with Bacon, Tomato, Lettuce and Guacamole

You could do several variations of this. Maybe you hate Guacamole- try it with just the BLT, you could even use these for tacos with ground beef or chicken fajitas.
If you are looking for a lot of protein and energy for a busy day- this is the perfect breakfast. It was filling and gave me a great energy boost!
