This recipe is a primal version of a recipe I saw on Diners, Drive-ins and Dives. It was an all meatloaf episode. Preggo craving needed this so I did my best to make it primal. I used Applegate meats and Kerrygold cheese. I normally avoid dairy at all costs because it doesn’t settle well with my tummy but since I’ve been pregnant, I crave it and it doesn’t bother me so I have a little on occasion.
This was so good.

Deli Stuffed Meatloaf

Ingredients:
1 lb ground meat (I used turkey)
1 tsp Salt
1/2 tsp Pepper
1/2 tsp Rosemary
1/2tsp Marjoram
1 tsp Garlic
1/4 tsp cumin
1 tbsp Mustard
1egg

Filler:
3 slices Ham
3 slicesSalami
1 cup grated Kerrygold dubliner cheese

Process:
Grease a loaf pan with coconut oil.
Mix ingredients (minus the filler) in a bowl.
Layer bottom of pan with meat mixture. Make a center pocket and add deli meats and cheese.
Add meat on top of the deli meat and press the meat on edges to close any gaps.
bake at 400 for 30-35 min.

I lit my cinnamon apple candle and ghost pumpkin candle. Threw a Boston Butt in the crock-pot and am ready to smell this for 8 hours. This is how Fall always started when I was a little girl. This same CD, apple cinnamon candles, fresh air and the smells of cooking in the kitchen.

Hubby and I did some projects around the house and then ended our evening with a delicious dinner. Our friend Wes joined us and we ended up taking a walk to the neighborhood playgrounds. The boys taught me Kipping and Wes convinced me to flip over on the pull up bars. I did an assisted handstand push up, monkey bar and I tried some cartwheels (eeek). I ended my play time with a few attempts at back bends. I finally did one that was fairly unassisted but then I tried again and landed on my head! I decided to let it rest for tonight and maybe try again tomorrow (if I am not too banged up!) I realize that if I would just quit being afraid of hurting myself that I have a lot more strength than I allow myself to use. My Fall goal I guess.

Boston Butt

Ingredients:

  • Large Boston Butt
  • 1/4 cup Honey
  • 1 Tbsp. of each Cumin, Cinnamon, Chili Powder
  •  2 tsp. of each  Salt, Pepper, Red Pepper Flakes (you may need to adjust the measurements based on the size of your meat)
  • 2 cups Water

Process:

  1. Put Water in a crock- pot and turn it on low.
  2. Rub your meat with seasoning
  3. Place meat in the crock- pot and drizzle with honey.
  4. Cover and cook for 8 hours on low.

It’s never too early to practice your Thanksgiving skills! In our house Sunday is our cooking day. We like to make some meals so that if we get busy we are not tempted to eat out all the time. On Saturday we decided to try grilling a 12 lb turkey. This is more than enough meat for 2 people.

Grilled Turkey

Ingredients:

  • 1 Whole Turkey
  • 1/2 Cup olive oil
  • 2 Tbsp Fresh Rosemary
  • 1 tsp Salt
  • 1 tsp Garlic

Process:

  1. Place coals on the grill and allow them to heat up and get ashy for 30 minutes.
  2. While the grill is heating, prepare your turkey
  3. Remove neck and giblets form the turkey and remove extra skin.
  4. In a bowl mix olive oil, rosemary, salt, pepper and garlic.
  5. Baste the turkey all over very well. Get under the wings, inside, top and bottom. *Optional- tie his legs together. (you may not want to stuff your turkey because cook time would be very long.)
  6. Separate coals into two piles and place a drip pan in the center.
  7. Add 12-15 pieces of coal to the pile and cover place the grates on top.
  8. Grease the grates with oil.
  9. Place the turkey (breast side up) on the grates over the drip pan.
  10. Allow the turkey to cook for 12min per LB.
  11. Every hour add some coal to keep the temperature of the grill between 250-300 degrees. Try not to open the lid of the grill unless you have to.
  12. Breast meat should be at around 170 degrees and thigh meat should be around 180 degrees. Once the turkey is at the correct temperature, remove from the grill and let him cool for a while.
  13. Carve and serve!

Once the turkey is cooked, you can use it for so many things. We have it in salad, for breakfast with eggs, sandwiches, hot with veggies!  Enjoy!
