Paleo Meat staples:

  • Venison, Beef, Bison
  • Free- Range chicken or game birds
  • Nitrate free bacon or ham
  • Roasted Turkey
  • Pork
    *Try to go with Grass fed, lean meats for the bulk of your meat eating. Breakfast meats are tricky- we do ham, bacon or even left over pulled pork or steaks with eggs or in an omelet.

My Paleo Snack or side dish staples:

Cauliflower
Salad
Asparagus
Fresh Salsa
Guacamole
Carrots
Celery
Squash
Cucumbers
Onion
Peppers
Grape tomatoes
sesame seeds
almonds
Macadamia nuts
Cashews
Berries or in season fruits
Almond flour (buy in bulk)
Coconut flour
Any fruit in moderation
a little dried fruit in moderation
Dark chocolate 72% or higher in moderation
*Eat all the veggies you want- some days I eat an entire container of cherry tomatoes for a snack.
Dijon mustard’s
oil and vinegar
Herbs and spices

Try to avoid:

  • Dairy products (If full Paleo, if just primal- you may have full fat, raw organic milk products- Brandon is more Primal because he still does grass- fed cheese)
  • Sugar (yes sugar is not paleo) -replace with honey, palm sugar or maple syrup- all natural
  • Juices- make your own
  • White/ wheat flour
  • Grains- your body cannot naturally digest them
  • no white potatoes
  • corn
  • Legumes- What the heck is a legume?
  • Soy
  • *When buying dark chocolate- try to get soy, dairy free – or make sure soy lechtin is last on the list*
  • Trans-fats
  • Processed- pre made foods.
  • Vegetable oil
    Best tip– Read the labels and make sure you know what all of the ingredients are before you buy them. Buy foods with the least amount of ingredients.

*I’ve noticed that if I pre-slice some of the veggies and keep them in an easily accessible container- I am more likely to snack on them rather than opening up a chocolate bar or a bag of nuts and dried fruits.

Kimberly’s Classic Homemade Chicken Soup Ingredients:  4 lg. boneless, skinless chicken breasts (do not slice) 2 C.  Chicken broth 8 C. Water 1/4 tsp Garlic 2 C. Green Beans 1 C. Carrots, diced 1 Parsnip, Diced 2 Celery stalks, Diced 1 tsp. Parsley 2 tsp.  Sea

Sweet Venison Steaks and Buttery String beans

Venison steaks are delicious and melty in your mouth as long as you know how to cook them! I have had some TERRIBLE steaks but I will tell you how to make them right. *You can use this on regular steaks as well*
First, Pull your Venison out of the freezer or fridge. (This recipe is for 4-5 medium steaks so you may need to adjust measurements if you are making more than 5)
Soak the meat  to pull some of the blood out and soften up the steak first- this will take away the “Gamey” taste. You don’t have to do this but, it makes a tender steak.

Venison soak

  • 1 cup Water
  • 2 TBS Baking Soda
  • 1 tsp Sea Salt
  1. Put all 3 ingredients in a bowl and mix well. Place your steaks in the bowl and let them soak for 20 min.
  2. Do this 1-2 times. I generally soak them 2 times. Rinse steaks and place them in the marinade.

Sweet and Savory Marinade
1cup Water
2 tsp Sugar Free meat spices (any) or just mix up some Garlic, sea salt, thyme, pepper and rosemaryWe use Chef Leo’s Game and Meat Rub 
1 tsp Honey
1 tsp Molasses
1 tsp Sea Salt
1/2 Chili Powder

Mix all ingredients in a Tupperware container, add steaks and cover with a lid. Shake and place in fridge overnight. We’ve soaked for up to 3 days and the steaks are awesome!
Sweet Venison Steaks
  1. Pull steaks out of fridge and pour some of the marinade.
  2. You can cook the steaks on a grill or in a skillet.
  3. Tonight we did them in a skillet.
  4. Pour some of the marinade in the skillet to coat the bottom.
  5. Turn the temperature to medium heat.
  6. When marinade starts to bubble, put the steaks in.
  7. Cook 6 minutes on each side for medium well or 8 minutes on each side for well done. You may need to adjust times based on your temperature. As steaks are cooking continue to pour the marinade over top of the steaks.

*The key here is to watch your steaks cook and cut them in the middle when you think it is finished to check the “doneness”. Do not burn them or overcook them- this will result in tough, dry steaks.

Buttery String Beans
Place beans in a pot with 3/4 cup water.
Cover and Bring the beans to a full boil.
Turn Temperature down and let beans simmer covered for 6-8 minutes.
Add Salt, Pepper and 1 TBS butter (Grass- Fed if Paleo)

Plate and Enjoy!

                                                                Winter Classic Meal Pizza Crust- Ingredients: 2 cups Blanched Almond Flour 2 Eggs 3 TBS Olive Oil ¼ tsp Baking Soda 1 tsp Garlic Powder 1 ½ TBS Italian Seasoning 1 tsp Sea Salt Process: Combine all of the Pizza Crust ingredients with a fork

Spaghetti Squash with Venison Sauce

 Going out for a long run or putting in an extra long session at the gym? Your body often feels better when you have a belly full of pasta (before or after). Try this healthier alternative to pasta!
Fresh and delicious. Here I made it with a meat sauce but it also tastes good with butter (grass fed if paleo), salt and pepper. If you aren’t on Paleo- try it with some Parmesan cheese.
Ingredients:
  • 1  Spaghetti Squash
  • 1 lb. Meat- I used Venison. (You can use chicken, beef, or Turkey)
  • 1 jar Pasta Sauce- I use Classico Tomato and Basil (has all natural ingredients, salt is listed last)
  • 2 Cloves of Garlic, minced
Process:
Spaghetti Squash:
  1. Stab Spaghetti Squash 5-8 times
  2. Place in a Microwave safe bowl and Microwave for 8 minutes
  3. Flip squash over and microwave for another 7 minutes
  4. Remove from Microwave and let cool for 5 minutes
  5. Cut open squash and scoop out the seeds in center
  6. Use a fork to scrape out the spaghetti squash

 

 

 

 

Venison Sauce Process:

  1. In a saucepan, brown venison completely.
  2. Add 2 cloves of mince garlic. Allow to simmer for 2 minutes.
  3. Pour in 1 jar of Pasta Sauce. Allow to simmer until warm.
  4. Plate Spaghetti and pour sauce over top.
  5. Serve with spinach salad and Enjoy.
