Pesto Bacon Chicken Salad

Pesto Bacon Chicken Salad

Pesto always reminds me of summer. My mom used to make pesto chicken salad and put it on homemade croissants. Although I will not be serving mine on Croissants, you are free to serve it however you wish! 

Homemade Pesto

Ingredients: 

  • 2 C. Fresh Basil leaves
  • 1/3 C. Chopped Walnuts
  • 4 Garlic Cloves
  • 1/2 C. Olive Oil
  • 1/2 a lemons juice
  • Salt and Pepper to taste

Process: 

  1. Place all the ingredients in a food processor until well blended. You may need to scrape the sides a bit to make sure it is all mixed well.
  2. Store in a jar in the fridge.
Pesto

Pesto Bacon Chicken Salad

Ingredients:

  • 1 Lb Cooked Chicken
  • 1/3 C. Pesto
  • 1/2 Red onion, finely chopped
  • 4 Strips Bacon, Crisp and chopped
  • 1 Avocado, diced
  • 1 tsp. Fresh Cilantro, finely chopped
  • Salt and Pepper to taste

Process:

  1. Shred chicken into manageable pieces and place in a large bowl.
  2. Add pesto, onion, bacon pieces and salt and pepper to taste, mix well. Taste test for you own personal flavor needs.
  3. When you are ready to serve carefully mix in the Avocado and serve chilled.

 

This was a great recipe to trim back my giant Basil plant. Did you know that Cilantro and herbs in general are a high source of iron and they help remove heavy metals and iron from your body? They can cleanse your liver and they are high in Vitamin C, Oleic Acid and Linoleic acid. Eating more herbs can prevents UTI, Inflammation, gas and bacterial infections. this is what Yuri Elkaim taught me about herbs during the Real food Summit by Underground Wellness. Eat more Herbs!

    Grilled Old Bay and Lemon Haddock Ingredients:  2 Haddock Fillets 1 Tbsp. Old Bay seasoning 1/2 Lemon Process: Brush each filet with lemon and sprinkle with old bay seasoning Place on 350 degree , lightly oiled Grill. Cook for about 4 minutes on each

We had a big lunch today so I decided to make a light, spring dinner. My sister and her husband were in town visiting and he requested that I make Brandon’s Pizza Bites. For lunch we had pizza bite appetizers, Herb Chicken and Salad. For Dessert I make Blueberry Bread. Mikalanne and Andrew headed home and Brandon went to mow the lawn and clean up the yard. I quickly cleaned up the house and decided to play around with a light recipe for dinner. For lunch, I have found the Tuna is easy and filling but I am tired of always eating it the same way, while it is good, it can be boring day after day. So today I tried using avocado as a moisture instead of mustard. It was really good and I was actually surprised at how moist the avocado made the tuna.  

Sunday Brunch
Ingredients:
1 Can Tuna Fish
1/2 Avocado
1/4 tsp Salt
Pepper to taste
*Red Onion, diced (optional)


Process:
 
Avocado mashing
  1. Mash half avocado in separate bowl until it is nice and creamy. This will make it easier to mix into the tuna.
  2. Mix Tuna, salt, pepper and avocado together in a bowl. 
  3. Add onion and mix well.
  4. Serve with your favorite veggies  
 
Add a little sea salt and mix tuna and avocado.

On days like today, it was nice to come home to a roast in the crock pot! After a long day of teaching inside in 74 degree weather, I decided to play outside in my front yard. I removed some rocks, re-structured some flower beds,

BLT and Egg Breakfast Sandwiches

BLT Egg Breakfast Sandwich

Ingredients:
  • 2 C. Almond Flour
  • 2 Eggs
  • 1 tsp Salt
  • ¼ tsp chili powder
  • 6 drips of Tabasco Sauce
  • For Frying: 1 tsp. Coconut oil
 
Process: 
 
Mix all the ingredients in a bowl, mix well.
Roll into a ball (about the size of a golf ball. Hand flatten into a nice circle- You don’t want them to be paper thin (as thick as an English Muffin or thin pita)
Heat the Coconut Oil in a skillet until it is warmed (about mid to low heat- 3.5ish).
Place flattened dough into the coconut oil for about 30 seconds on each side (should be lightly browned).
*You don’t want them too thin or cooked too long because then it will make a chip rather than a soft pita. 
Remove and place on a paper towel to dry.
Next cook Bacon and eggs, slice tomato, lettuce, veggies of your choice, for Brandon I sliced some Cheddar Cheese.
Plate your Sandwich and enjoy! This was a great pre-gym meal, it had a lot of protein and it gave me energy boost I needed to Kick box while Brandon swam a mile in the pool!
MMMM! It doesn’t even crumble when you bite into it!
