Epic Fish Tacos with Fresh Corn Salsa

A fresh summery dish that my whole family loved. Corn isn't paleo but when my kids see corn fields all around us here in Delaware and find in fresh at the farmers market, I helped them find a couple pieces to try. One of our favorite foods to enjoy in the Delaware beach area is fish tacos. This dish was my own healthier homemade version.
Total Time 30 minutes
Servings 4

Ingredients

  • 1 Cucumber diced
  • 2 Roma tomatoes diced
  • 1 Corn, cut fresh off the cobb
  • 1 tsp Chipotle mayonnaise Paleo Mayo (sir kensingtons or Primal Kitchen are my favorite)
  • 1 tsp Mayonnaise
  • Salt and pepper to taste

For the salmon:

  • 2-4 Pieces Fresh Wild Caught Salmon Or fish of choice
  • 2 Eggs Whisked
  • 1 Cup Epic BBQ Pork Rinds
  • 3 cloves garlic
  • 1/4 C. Coconut oil for frying

Instructions

Epic BBQ Crusted Fish

  • Whisk one egg in a bowl
  • Crush Epic BBQ pork rinds in a seperate bowl.
  • Roll salmon through egg then pork rinds.
  • In a pan, place enough coconut oil into the pan that the bottom is totally covered.
  • Add three garlic cloves
  • Once cloves begin to simmer, place salmon in and fry on both sides until it is light pink and flaky.

Fresh Corn Salsa

  • Slice corn off the cobb and place in a large bowl
  • Finely chop cucumber and place in a bowl
  • Finely dice tomato and place in a bowl
  • Add mayo, salt and pepper and stir gently until all vegetables are coated. Set aside in the refrigerator until you are ready to eat!
  • I ate mine without a tortilla but I made tacos out of them for my family. (Just not enough shells for me to have a taco and that is okay!)
I cut up the fish and put in a @mikeys Paleo wrap, top with fresh salsa and serve immediately.

Flourless Crispy Fried Chicken

My husband is addicted to Matty Matheson's cooking videos. We watched his Gluten-Free Spicy Fried Chicken video and decided to give it a shot. I tamed the heat a bit using Coconut sugar (because... Kids! They have to eat too I guess). I also changed the cooking oil. Sometimes I use straight Ghee or coconut oil. I've also used a combo of Black Seed Oil and coconut oil. It really depends on what I have on hand and if I can get 2 Cups out of the oils I stock.
Course Main Course
Total Time 45 minutes
Servings 4

Ingredients

  • 1 Chicken, quartered
  • salt and pepper for cooking seasoning
  • 3-5 cloves garlic, smashed
  • 1 tbsp Paprika
  • 1/2 tsp. Cayenne
  • 1/2 tsp. Ground Cloves
  • 1/2 tsp. celery seed
  • 1 Tbsp. Coconut Sugar
  • 1/2 tsp. Cumin
  • 2 C. Ghee or oil of choice. I use a coconut and black seed oil combo at times
  • 2 Tbsp. Bacon fat

Instructions

  • Bring a large pan to medium-high heat. Add oil to the pan (should be about 2" of oil at the bottom).   Throw the garlic into the oil and cook for 3 minutes longer.
  • Quarter the chicken and remove the spine and guts. Pat dry the chicken and sprinkle with some salt and pepper.
  • Use tongs to place the chicken in the hot oil. Cook for 5-6 minutes on each side, until cooked through. (No Pink)
  • Toss the garlic and the bacon fat into the pan with the chicken and cook for 3 more minutes.
  • While the chicken is cooking, mix the spices in a separate bowl.
(coconut sugar, paprika, cumin, celery seed, cayenne)
  • Once chicken is removed from the oil, place in a large bowl and coat it evenly with the spices.

Deli Stuffed Meatloaf https://www.farmfreshandactive.com/2013/03/deli-stuffed-meatloaf/ https://www.farmfreshandactive.com/2013/03/deli-stuffed-meatloaf/#respond Wed, 06 Mar 2013 17:22:50 +0000 http://www.farmfreshandactive.com/?p=1278 …]]> Part of my bed rest issues… I watched a lot of HGTV, Food Network, and Travel Channel. This recipe is a primal version of a recipe I saw on Diners, Drive-ins and Dives. It was an all meatloaf episode. Preggo craving needed this so I did my best to make it primal. I used Applegate meats and Kerrygold cheese. I normally avoid dairy at all costs because it doesn’t settle well with my tummy but since I’ve been pregnant, I crave it and it doesn’t bother me so I have a little on occasion.
This was so good.

Deli Stuffed Meatloaf

Ingredients:
1 lb ground meat (I used turkey)
1 tsp Salt
1/2 tsp Pepper
1/2 tsp Rosemary
1/2tsp Marjoram
1 tsp Garlic
1/4 tsp cumin
1 tbsp Mustard
1egg

Filler:
3 slices Ham
3 slicesSalami
1 cup grated Kerrygold dubliner cheese

Process:
Grease a loaf pan with coconut oil.
Mix ingredients (minus the filler) in a bowl.
Layer bottom of pan with meat mixture. Make a center pocket and add deli meats and cheese.
Add meat on top of the deli meat and press the meat on edges to close any gaps.
bake at 400 for 30-35 min.

Primal Pizza Bites https://www.farmfreshandactive.com/2012/04/primal-pizza-bites/ https://www.farmfreshandactive.com/2012/04/primal-pizza-bites/#comments Thu, 26 Apr 2012 22:33:00 +0000 http://www.farmfreshandactive.com/2012/04/brandon-mans-up-a-recipe/ …]]> For all you Bar food lovers…Pizza pocket craving?
Brandon came home today excited to cook…WHAT is wrong with him? I don’t mind but really? I never would have pegged him as someone who sits around and comes up with recipe’s. Before he told me his idea, I assumed it would be like “oh hey, let’s take these rolls and eat them with soup or put some marshmallow and cashew butter on it”. Nope-he invented his very own Primal Pizza Rolls. I must say that even though I am not a huge fan of cheese or pizza, these were delicious. He used left over Brazilian Cheese Bread for his idea.

Gotta love a man in the kitchen!
  1. First Brandon placed 6 Brazilian cheese breads on a baking sheet.
  2. Then he pre-heated the oven to 350 degrees.
  3. After that he cut an “x” at the top of each roll.
  4. Next he stuffed each roll with two little chunks of raw milk cheddar.  And then he placed two small slices of pepperoni in the roll.
  5. After this he sprinkled some Oregano in them.
  6. Bake them in the oven for about 6 min. (until the cheese was melted.)
  7. He let them cool on the counter for a half second and then we devoured them for dinner. *TRUE STORY*
Toasty, melty and delicious.

I told Brandon that I was going to teach him how to make the cheese bread so that any time I don’t feel like cooking, he can make these.
Girls, make these for your guys and they will love you forever! This is true Primal MAN Food at its best.
Thanks for dinner Brandon, I Love you and these pizza pockets.

Brazilian Cheese Bread https://www.farmfreshandactive.com/2012/04/brazilian-cheese-bread/ https://www.farmfreshandactive.com/2012/04/brazilian-cheese-bread/#comments Wed, 25 Apr 2012 01:30:00 +0000 http://www.farmfreshandactive.com/2012/04/brazilian-cheese-bread/ …]]> Brazilian Cheese Bread

Ingredients:
  • 1 Egg (room temperature)
  • 1/3 C Coconut Oil
  • 2/3 C Almond Milk
  • 1 1/2 C Tapioca Flour
  • 1/2 C  Grated cheese, I used Raw Milk Cheddar
  • 1 tsp Sea Salt
  • ¼ tsp Garlic for a soup bread or 1/4 cinnamon + 1 tsp Honey for a dessert bread
Process:
  1. Preheat oven to 400 degrees
  2. Grease a mini-muffin pan with coconut oil
  3. Combine all of the ingredients in a blender and pulse on medium/high until all is well blended. Scrape blender if needed.
  4. Pour batter into mini muffin pan. Fill it all the way up without over flow. I got about 22 mini muffins out of this batter.
  5. Place in the oven and bake for 15 minutes until golden brown. Do not over cook bread should be chewy and light.
  6. Serve warm! I tried them alone (delicious), with butter and honey (amazing). They would also be outstanding with some fresh jam or with a bowl of chicken soup.
So what do they taste like? They are chewy and light. They are not overwhelmingly cheesy (could be the choice of cheese or the fact that I added just barely a half cup) but I am not a cheese fan.

These reheat and if you want them for a dinner, you can save the batter in the fridge for about a week.

Tastes like a warm roll! YUM

Paleo And Primal Eating Tips https://www.farmfreshandactive.com/2012/01/paleo-primal-eating-tips-and-help/ https://www.farmfreshandactive.com/2012/01/paleo-primal-eating-tips-and-help/#respond Fri, 20 Jan 2012 03:55:00 +0000 http://www.farmfreshandactive.com/2012/01/paleo-primal-eating-why-do-it/ …]]> Weight loss, Healthier, more energy, No more medications, Better hair, better skin, better achievements at the gym, A fun challenge, Try something new that you don’t have to pay for a meal plan or a gym membership! Brandon lost a pants size without stepping foot in a gym!
Try it for 21 days and I garuntee that you won’t regret it!!
                Typical week for us:

Paleo Meat staples:

  • Venison, Beef, Bison
  • Free- Range chicken or game birds
  • Nitrate free bacon or ham
  • Roasted Turkey
  • Pork
*Try to go with Grass fed, lean meats for the bulk of your meat eating. Breakfast meats are tricky- we do ham, bacon or even left over pulled pork or steaks with eggs or in an omelet.

My Paleo Snack or side dish staples:

Cauliflower
Salad
Asparagus
Fresh Salsa
Guacamole
Carrots
Celery
Squash
Cucumbers
Onion
Peppers
Grape tomatoes
sesame seeds
almonds
Macadamia nuts
Cashews
Berries or in season fruits
Almond flour (buy in bulk)
Coconut flour
Any fruit in moderation
a little dried fruit in moderation
Dark chocolate 72% or higher in moderation
*Eat all the veggies you want- some days I eat an entire container of cherry tomatoes for a snack.
Dijon mustard’s
oil and vinegar
Herbs and spices

Try to avoid:

  • Dairy products (If full Paleo, if just primal- you may have full fat, raw organic milk products- Brandon is more Primal because he still does grass- fed cheese)
  • Sugar (yes sugar is not paleo) -replace with honey, palm sugar or maple syrup- all natural
  • Juices- make your own
  • White/ wheat flour
  • Grains- your body cannot naturally digest them
  • no white potatoes
  • corn
  • Legumes- What the heck is a legume?
  • Soy
  • *When buying dark chocolate- try to get soy, dairy free – or make sure soy lechtin is last on the list*
  • Trans-fats
  • Processed- pre made foods.
  • Vegetable oil
Best tip– Read the labels and make sure you know what all of the ingredients are before you buy them. Buy foods with the least amount of ingredients.

*I’ve noticed that if I pre-slice some of the veggies and keep them in an easily accessible container- I am more likely to snack on them rather than opening up a chocolate bar or a bag of nuts and dried fruits.
