Hello all! So this is going to be my first time writing out a receipe! I hope you enjoy it! Kimberly had me try some of her cauliflower mash! MMMMM, it was DELISH! So, I found this receipe that calls for the same! It was was SO good!! Hope you enjoy it!

Flank Steak with Cauliflower Puree

Ingredients:

  • 1 Small head of cauliflower
  • 1 1/2 lb of steak
  • salt & pepper
  • 1/2 cup parsley chopped
  • 2 tbsp Red Wine Vinegar
  • 1 shallot or 1/4 small red onion (finely chopped)

Process:

1. Fill large saucepan with 1 inch of water. Fit with a steamer basket. Bring the water to a boil and place cauliflower in the basket ( destemed and cut into pieces) Cover and cook until tender.

2. Heat 1 tbsp of olive oil in skillet over medium heat. Season steak with 1/2 tsp of salt and pepper. ( 5 to 6 minutes on each side)

3. Transfer cauliflower to processor. Add 1 tbsp of olive oil and 1/4 tsp salt and pepper Puree until smooth.

4. In small bowl, combine parsley, vinegar, capers,shallot, and tbsp of olive oil. Serve with steak and cauliflower

Tonight I prepared a few meals for Brandon and I so that we would have enough meat for a few dinners and a few lunches. We have noticed that salads for lunch in the summer are fantastic but salads for lunch in the winter- Not

                                                                Winter Classic Meal
Pizza Crust-
Ingredients:
  • 2 cups Blanched Almond Flour
  • 2 Eggs
  • 3 TBS Olive Oil
  • ¼ tsp Baking Soda
  • 1 tsp Garlic Powder
  • 1 ½ TBS Italian Seasoning
  • 1 tsp Sea Salt

Process:

  1. Combine all of the Pizza Crust ingredients with a fork until it is think and begins to form a ball.
  2. Once you have made a ball with the crust place it on a olive oiled pizza stone (or cookie sheet).
  3. Cover with Parchment paper and roll flat and thin.
  4. Brush the crust with fresh minced garlic and olive oil.
  5. Bake the crust for about 20 minutes at 350F.
While the crust is baking make the sauce and prepare your toppings.
Pizza Sauce-
  • 1 can Tomato Sauce
  • 1 can Tomato Paste
  • 2 TBS Fresh Basil
  • 2 tsp Garlic Powder
  • 2 tsp Rosemary
  • 1 tsp Sea Salt
  1. Combine all of the ingredients in a bowl and mix well.
  2. When Pizza crust is finished top with sauce (As much as you prefer, Brandon isn’t a huge fan of sauce so we go light on the sauce).

Toppings-

  • Fresh Veggies, Grass- fed cheese, Bacon, Meat… Whatever  you  want!!
  1. Place your toppings in layers on top of the sauce.
  2. Place pizza in the oven for 7-10 minutes (watch for ingredients to warm or cheese to melt)

Chocolate Strawberry Crunch

Use Paleo Crunch recipe that I posted on my blog in November.
Cut up strawberries and break up bits of dark chocolate.
Place warm crunch, strawberries and chocolate in a bowl and enjoy!

Even though the flyers lost the Winter Classic, we still enjoyed the game and enjoyed a delicious meal together before we both head back to work tomorrow 🙂 We even got some snow flurries and cleaned and organized our entire house- what a great Winter Break!

Traveling can be tricky when you are trying to make a good lifestyle change. The best way to stay on track is to bring some of your go to items home. If someone has dessert- make sure you have your own sweet to snack on. It is all about planning ahead and keeping your ultimate goal in mind. *Your goal to be a healthier you!* My last tip- Always pack your workout gear and find new places to take a hike, run or bike if possible.
Tomorrow we head to Maryland to go to visit our family! I made Paleo Crunch, Apple Bran Muffins, packed fruits and veggies and ingredients to make Zucchini Lasagna (per my families request). I also worked on a bread. Normally I make a Blueberry buckle that is to die for (sooo not healthy). This was my attempt to make a healthier alternative to that treat. Hopefully my family will approve.

Ingredients:
  • 3 eggs
  • 1/2 Cup Honey
  • 1 tsp Vanilla Extract
  •  2 1/2 Cup Blanched Almond flour
  • 1/2 tsp Salt
  • 1/2 tsp Baking soda
  • 1 Cup Fresh blueberries

Process:

  1. Preheat the oven to 350
  2. Whisk together the eggs, honey and Vanilla.
  3. Add  in the  flour, salt and baking soda
  4. Fold in the  fresh blueberries, carefully so you don’t break the blueberries open!
  5. Rub coconut oil on a loaf pan and pour in the batter.
  6. Bake for 40-45 minutes until a toothpick comes out clean.
  7. Cool on a cooling rack for 20 minutes

Enjoy, these are perfect with a cup of coffee for breakfast or dessert!
