Kombucha Jello

Blast from the past Jello treat! 
Course Dessert
Prep Time 10 minutes
Cook Time 3 hours
Total Time 3 hours 10 minutes
Servings 6 People

Ingredients

  • 1 Cup Water
  • 2 Tbsp Vital Proteins Gelatin (or any clean gelatin)
  • 1 Cup Cold kombucha Flavor of choice

Instructions

  • Pour Water into a saucepan and bring to a rapid boil.
  • Stir vigorously until gelatin is dissolved in the hot water
  • Add Cold Kombucha 
  • Pour into molds or a dish for cookie cutting. 
  • Place gently in the refrigerator for 3+ hours
  • Remove, cut and serve these jiggly wiggle treats to your crew

      Not “Oatmeal” Breakfast Cookies

Always looking for alternatives to eating eggs for breakfast! Now that I am pregnant with baby number two, I am trying to stock up on easy recipes for on the go, busy mornings.

During the winter months, I crave a warm bowl of oatmeal. I created these Not “Oatmeal” Breakfast Cookies for my busy mornings.

  • Ingredients:
  • 1/2 C. Almonds
  • 1/2 C. Walnuts
  • 1 Tbsp. Flaxseed Meal
  • 10 Pitted, Medjool Dates
  • 1/4C. Honey
  • 1/4C. Almond Milk
  • 1/2C. Unsweetened Coconut Shreds
  • 1/4 tsp. Sea Salt
  • 1/4 tsp. Cinnamon
  • 1 Egg
  • 1/2C. Raisins

Process:

  1. Place Flaxseed Meal in a small bowl and add 2 Tbsp. Water, set aside for 2-3 minutes.
  2. In a food chopper, Chop Walnuts and Almonds.
  3. Set Nuts aside in separate bowl
  4. Chop Dates, Milk, Flax, Salt, Cinnamon, Coconut Shreds and Honey until creamy
  5. Pour Date mixture into the Nut mixture, stir until well blended.
  6. Add 1 Egg to the nut mixture and mix well.
  7. Add Raisins and stir carefully.
  8. Spoon batter onto Silpat/ parchment paper lined tray
  9. Bake at 350 degrees for 15 min.
  10. Place onto cooling rack to let them firm up.

Eating them warm is my favorite but they are good at room temperature as well. These are easy to freeze- they last about 2 months in a freezer.

*Warning- Toddlers love these Cookies and sneak them when you aren’t looking.

Chocolate and Cinnamon Sugar Donuts

 Brandon’s Paleo Donuts

  • 1/2 c. of Coconut Flour
  • 1/8 tsp Sea salt
  • 1/4 tsp Cinnamon
  • 1/4 tsp of baking soda
  • 6 eggs, room Temperature
  • 1/4 c Honey
  • 1 Tbsp. Vanilla
  • 1/2 c. Butter or Coconut Oil, melted
     

Process:

  1. In a small bowl, mix Flour, baking soda, cinnamon and salt.
  2. Place flour mix into a blender and add Eggs, Oil, Vanilla and Honey.
  3. Blend until batter is smooth and mixed well.
  4. Fill donut pan circles about 2/3 of the way full with batter.
  5. Cook in Donut maker for about 5 minutes.
*If you do not have one of these fancy donut makers you can refrigerate the dough until it is firm (about an hour) and then scoop them onto parchment paper and bake them for about 20 minutes in the oven at 350 degrees. They will come out looking like a donut cookie like the ones on the red plate in the photo below!
Toppings:
My favorite topping is a simple Cinnamon and Coconut Sugar blend. My families favorite is a Chocolate topped. Both are very easy.
Cinnamon Sugar Donuts:
Mix 1/4 Cup Coconut Sugar and 1 Tbsp. Cinnamon in a bag. When donuts are slightly cooled, place them in the bag and give it a few shakes to coat the donuts. Remove and place on a cooling rack.
Chocolate:
Melt 1/2 C. Chocolate Chips, I use Enjoy Life.
Dip half the donut in the warm chocolate and place on cooling rack.

I was never a huge pumpkin pie fan but my husband has to have his favorite pie for our dinner. Last year I made a Frozen pumpkin pie for Paleo Lifestyle Magazine and I loved it but this year we went traditional. Check it out and make sure you are prepared with paleo treats for you day of thankfulness. This year I am so thankful for my family- my son and all of the great adventures we’ve encountered over the last year!

Paleo Pumpkin pie

Ingredients:
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
2 large eggs
15 oz. 100% Pure Pumpkin
3/4c. coconut sugar
1/2 c coconut cream (place a can of coconut milk in fridge over night and use the thick cream at top)
1 c almond milk

Directions
Mix coconut sugar, cinnamon, salt, ginger and cloves in small bowl.
Beat eggs in large bowl. Stir in pumpkin and spice mixture. Gradually stir in milk and cream.

Graham cracker Crust:
I use this delicious graham cracker recipe from Paleo Mom. Rather than baking crackers I pat it into pie plates. This recipe makes 2 crusts.

Pat dough into a greased 8″ pie plate.
Bake crust for 10 minutes.
Pull pie crust out and flatten with a spoon then add pie filling.
Bake for 60 min at 325 degrees or until a knife comes out clean. Then let cool on wire rack for 1 hour.
Serve with cream or ice cream!

My foot is still in terrible pain and most days it is hard to walk or stand. My kitchen creativity is lacking because I generally come home from work, read a chapter of my baby book and then ice and elevate my foot before going to bed. Super hubby has been doing all the cooking and cleaning.

Today was so nice out so I opened the doors and windows and found some energy to make super hubby a treat after his 13 mile run to thank him for all he’s been doing. Not sure if he will be more excited about the treat or that I washed the giant sink load of dishes. Brownie bite is healthy and growing well! I’ve been feeling kicks and even saw my tummy move a little bit yesterday. I’ve been feeling wonderful and have ye to have any pregnancy sickness or complications. If my foot were better, I would have zero complaints!

Orange Creamsicles

2 fresh oranges
2 bananas
1/4 C. Coconut milk
3 Tbsp. Honey
1 tsp Vanilla Extract

Blend all ingredients in a blender (my ninja blends it so well)
Pour blended mixture into Popsicle holders
Freeze for 4 hours or over night
Enjoy!

I had so much fun playing in the kitchen with the fresh apples we picked from Crooked Run Orchard.

I decided to make an apple crisp and some Crock-pot applesauce.

 Crock Pot Applesauce

I sliced and peeled 10 apples and placed them in a crockpot. Next I Added 2 small lemon peels, half a lemons juice and 1 Tbsp. Cinnamon. I cooked the apples on low heat for 6 hours. Stir occasionally. When it is finished you can jar it and store in your fridge for 3 weeks or can it to use later in the winter months.

Apple Crisp

Ingredients: 

  • 2 Large Apples
  • 1/4 tsp Cinnamon
  • 1 Tbsp Honey
  • 1 Lemons juice
  • Coconut oil
  • I used Practical Paleo’s crumb topping- If you don’t have that book you could use: 1 Cup Walnuts, 2 Tbsp. Melted butter/ coconut oil, 1Tbsp. Honey and a pinch of salt. mix well and crumble on top of apples.
Process:
  1. Grease a pie plate and preheat oven to 325 F
  2. Slice apples into thin slices, I left the skin on for color.
  3. Place apples in the pie plate and sprinkle with lemon juice and cinnamon, stir until apples are evenly coated.
  4. Drizzle with honey apples with honey until apples are coated.
  5. Top with crumb topping.
  6. Place Crisp in the oven and bake for 30 minutes or until juices begin to bubble slightly and crumb top is golden brown.
  7. Serve warm with ice cream or coffee.
I wish you could smell this!

My grandmother used to make Strawberry Freezer jam from her own strawberry plants. My strawberry plants are new and didn’t produce very many but I got some great berries from the farmers market a few weekends ago and decided to try and make her freezer jams.

Strawberry Freezer Jam

Ingredients:

2 Cups Fresh Strawberries

2 Tbsp Honey

1/2 a lemons juice

Process:

  1. Place the berries in a bowl and mash them into a small juicy mess. (or in a blender- pulse)
  2. Place the mashed berries in a saucepan and let them simmer until it turns into more liquid.
  3. Next add honey and stir until it is mixed well.
  4. Simmer for another 25 minutes, stir occasionally.
  5. Using a candy thermometer and check the temperature- it should be around 220 degrees. If you don’t have a candy thermometer- It generally takes about18-20 min. The mixture will begin to thicken ( you don’t want it too thick because it will thicken while cooling.)
  6. Remove the jam from the heat and squeeze in half a lemons juice. Mix well and place in a mason jar. From here you can choose to can the jam or freeze the jam. (Or like we did- eat them right away!)

I had a dinner party tonight and almost forgot about dessert until I remembered seeing a similar pin on pinterest. Here is my Paleo approved version of Frozen Banana Nut Pops.

Frozen Banana Nut Pops

Ingredients:

Process:

  1. Place wax paper on a plate.
  2. Slice 1 banana into about 12-14 slices on the wax paper and stick them in the freezer.
  3. In a bowl combine Cashew nut butter, honey and sea salt. Mix well.
  4. Remove the sliced bananas from the freezer and top with cashew nut butter.
  5. Slice the 2nd banana into 12-14 slices and place on top of the Cashew nut butter.
  6. Stick a tooth pick in each banana sandwich and then place them in the freezer for about 30 minutes.
  7. Serve frozen with warm chocolate sauce.

The best way to stay on track is to bring some of your go to items home. If someone has dessert- make sure you have your own sweet to snack on. It is all about planning ahead and keeping your ultimate goal in mind. *Your goal to be a healthier you!* My last tip- Always pack your workout gear and find new places to take a hike, run or bike if possible.
Tomorrow we head to Maryland to go to visit our family! I made Paleo Crunch, Apple Bran Muffins, packed fruits and veggies and ingredients to make Zucchini Lasagna (per my families request). I also worked on a bread. Normally I make a Blueberry buckle that is to die for (sooo not healthy). This was my attempt to make a healthier alternative to that treat. Hopefully my family will approve.
Beautiful Blueberry Bread
Ingredients:
  • 3 eggs
  • 1/2 Cup Honey
  • 1 tsp Vanilla Extract
  •  2 1/2 Cup Blanched Almond flour
  • 1/2 tsp Salt
  • 1/2 tsp Baking soda
  • 1 Cup Fresh blueberries

Process:

  1. Preheat the oven to 350
  2. Whisk together the eggs, honey and Vanilla.
  3. Add  in the  flour, salt and baking soda
  4. Fold in the  fresh blueberries, carefully so you don’t break the blueberries open!
  5. Rub coconut oil on a loaf pan and pour in the batter.
  6. Bake for 40-45 minutes until a toothpick comes out clean.
  7. Cool on a cooling rack for 20 minutes

Enjoy, these are perfect with a cup of coffee for breakfast or dessert!
